Subject: Uncle Chris' recipes No 1: Stir fry Thai Style All you need is a large (preferably non-stick) wok, peanut oil,red wine vineger, chicken breasts, medium carrot cut into 4 cm strips, medium onion cut into chunks , one large tomato cut into small pieces, chillis, thai chilli sauce (good quality), 4 large cloves of garlic and a large chunk of ginger. 1) cut up the chicken into small 1cm cubes and marinate in oil and a bit of vinager for about 10 min. This tenderizes the meat!!! 2) Puree the ginger and garlic with a bit of water and add to the wok with about 2 tbsps of oil. Fry for 2 min. 3) add the chicken and stir fry for a bout 2 min. pour off the excess oil and stuff. 4) return to heat, add the carrots and stir fry the crap out of them for a bout 2 min. 5) Add the onions. At this point it should be looking good. 6) Add the chillis (whole or roughly cut). Stir fry for a bout a min. 7) Add 2-3 tbsps of ludicrously hot Thai Style chilli sauce. Stir fry for about 2 mins. Add the tomatoe pieces and cook until it forms a rough sauce. About 1 min. 8) Serve with rice and a dry white wine. Lovely Bon appetite or as they say in Thailand "Shawaddywaddy"
